Crops don't disappear when paved.
I couldn't re-plow a plowed tile with wheat in it, so I tried paving. It worked, but the half-grown wheat remains.

the wheat will continue to grow and you can harvest it.

you should advertise the bread you make out of that wheat as being "stone-ground" ^^
