If you have a dream catcher sitting within a house, will it create dreams? I've been waiting for about well over 20 minutes for even so much as one beautiful Dream to spawn and nothing happened.

Hrm, good question. I've never tried to use a dream catcher in a house before but it should. Sometimes dream catchers suffer from being unusable by certain players for whatever reason, likely a minor bug. Chickens in Crates
I've not yet built an chicken coop but i've found some chickens. Is it possible to keep them in crates until i've got myself an chicken coop or will they die?

Should do, we used to keep ours in the cellar (this world).
