Is it possible to leave scents with criminal acts turned off? I just hopped onto my boat on claimed land.

The game sometime remembers you own the boat. But not everytime.

From what I've seen, if the boat is fully on water, you can get back in. If you park it into the bank (like you would with a real boat), the boat can be considered on the land and thus claimed. This is purely my experience that I recall, and may have absolutely nothing to do with the mechanics. I've never worked to confirm if it's correct or not.

if carrot can be planted as a crop what is the purpose of stage 3 since you can get carrot seed from Wild Weedsown Weed. Or there is another purpose for carrot seeds?

Carrot seeds serve to raise carrot quality faster, and also can be used for numen.

If you're quality grinding it saves you time to harvest them at stage 3 and to just replant them. You may also need more seeds to plant grass maybe?

what do you mean by quality grinding? Does it me that if I plant carrots they will stay at the same quality, while seeds will keep on increasing the quality?

Crop quality is +/- 5* no matter when you harvest (for the two crops that can be harvested before final stage). Whereas trees gain quality when they grow.

*+2/-5 if seed quality exceeds the soil quality planted on.

I have taken them back even beached. It's just not an everytime thing. There ay be a short window of owner memory. So if you get back before it expires you may be able to use it. I can't say for certain as Im just guessing.
