Do entrails have any use? or are they just a throw em out the moment u get them kinda thing?

Keep them. They're used to make Mirkwood Offerings, a very strong early game curio which comes with the downside of costing a lot of experience. They can also be used to fish. If you're finding you don't have a lot of room for them in your crates/cupboards, you can make a trash stockpile out of both them and entrails.

What discoveries do you need for mirkwood offering ?

Any tree seeds, entrails and a mirkwood log. You can get mirkwood logs from the old logs lying around by chopping them.
