Jorbtar, as you know Halloween is coming around the corner again. This is the time to come out with spooky Halloween themed hats, lots of people love Halloween so making spook hats would earn a bigger earning from people buying them.
Also bring back witch hat.

Since I understand the collectors need, I have to support not bringing back old hats. Variations on old hats would work, however, provided that there is a distinctive difference. (Like put a flower in the bowler hat and change the color with each iteration, but only bring it back once a year. Something that could be repeated with certain other hats)
