So, I added some information to the cheese page. It shows in the browser where I edited it, but not from other browsers. I did remember to save, even got a "thank you" message and a suggestion of other pages to edit. I did not create an account.
I hope my edits are in limbo awaiting approval as an anti-vandalism measure, rather than lost.
[Edit - also, I notice lots of information in the cheese thread which has not made it to the wiki; I was basically compiling that information - and thought I'd share my work with everyone, rather than just making a personal spreadsheet. If what I've done so far ever appears, I'll consider finishing the job - but right now, I guess I might as well just make a personal spreadsheet.]

seems to be fine. Last two updates were made without an account by two different people.
The ones who see things differently.
You can praise them, disagree with them, quote them, disbelieve them, glorify or vilify them. About the only thing you can't do is ignore them.
