Animals walk on top of the water, or at least some of them do. They still can't enter the deep part of the water.

If you raise your perception and exploration and forage for some clover, you can ride a horse and walk on water yourself.

I do rather miss the Wood Medic aspect of the deer. Though since I one shot them since I started hunting them, I don't know as I'd notice.
