If you decide to make BBC or MBC check my thread.
No one buys or even uses Cellar Cheddar really, for little effort more and 2 days BBC is much better :)

If you have an iron mine there's no reason to not make mbc. People will buy this (or jorbonzola i'm told)

You can make cheese in cave instead mine.
Quality of rack will not affect, but quality of cheese tray will do (capping quality).
