i was wondering what people would be willing to trade for the whole deer ? and other game like foxes etc

Depends on their quality. Animals have different qualities now and higher quality animals will naturally be worth a lot more than lower quality ones. If you're closeby I'd probably be willing to trade curios for deers. We've got itsy bitsy spiders and other high yield curios.

well how to i know its quality before i chop it up?

Hrm, that's a good point. I guess it's an as-is trade then. Normally I'd say to check the quality of the resources around it but your survival is going to cap those and you'd also end up making your area look like hell by stripping everything looking for an accurate quality gauge.
