^^ yeah it's a shame we can't build with it, other than the snowman, which is useless outside of the winter months ofc, or use it in curios.

Is there a handy list of what agility/str/combat skills are needed to tackle each animal? I remember seeing once a few years back but I can't seem to find anything anymore

Check the "H&H Guides" stickied in this forum. Zebratul's combat guide has them listed, though it's an estimate. A proper combat deck is going to be needed for anything bigger than a bat. viewtopic.php?f=42&t=54070

If there are unstable tiles within range which become unsupported after the removal of the mine support, the removal will cause a cave in. This also means that you can now tear down mine supports without cave ins, if you still have proper support around it
Will removing one support cause damage to another support that's covering the same area? Like preventing a cave-in?

From what i've seen, no.
